Hot Mushroom Topper!!
Our organic greens are abundant so a very quick salad was topped with sautéed gourmet mushrooms with a tzaziki dressing. The rest of dinner is self-explanatory but the fresh wild cod was dredged in flour, dipped into an egg wash (egg diluted with a splash of water to make it beat well with a fork!) and rolled in panko. Pan-fried in coconut oil. So yummy!
