One of my favorite meals is a hot-cold loaded salad! I roasted chickpeas in the oven (375 with olive oil and seasonings for 15 min)…. Then in a pan sautéed asparagus and peaches - I know it sounds weird but it’s sooo good - I get them caramelized then top it on the salad. My other hack is I use the crushed chips at the bottom of the bag of veggies chickpea chips as my crispy topping - i do this with tortilla chips too!
