A healthy take on a rice&beans dish purely plant based!
Plantains cooked in avo oil
Brocolinni sautéed in olive oil, lemon, balsamic and garlic powder - oat milk butter on-top
The rice and beans starts with the same pan using the balsamic mixture that was left in the bottom, add red onion and jalapeño chopped fine, when starting to caramelize add the pinto beans. After a few minutes of sautéing add rice, lastly mix in cilantro. Serve with hot sauce (optional)
