1. Add a can of chickpeas on a baking sheet tossed with avo oil and seasoning of choice (I added a homemade kimchi powder)
2. On another baking sheet add sliced Brussels tossed with avo oil
Put both in a 375 oven and take out when crispy
3. In a frying pan in about oil sautée red onion, riced cauliflower and asparagus
4. Add both crispy chickpeas and Brussels and mix
5. Add lemon juice and gochujang
