Just sauté zoodles in garlic olive oil and toss with pesto
Sautè onion, mushrooms, peppers, and any veg you want. I added spinach for the green veg. Add plant-based ground protein (I used Impossible ground which is easier to cook straight from the freezer), cook thoroughly and then add tomato sauce.
Plated with plant-based cheese.
