Plant-based quesadillas!
Quick and easy meal prep:
Sauté chopped onion, sweet pepper, tomato, and garlic
Add a can of drained black beans and a good handful of frozen corn
Add your favourite spices, I used cumin and Trader Joe's Unami Mushroom seasoning (it has some heat too!)
Cook until everthing has chance to heat through. Put into a bowl. Clean pan and spray with a good oil (I used Miyoko's plant milk butter, so good!)
Lay enough filling on a corn tortilla to fill almost half of it. Top with chopped avocado, chopped cilantro, cheese (can use plant-based), and baby arugula...always add green veg to your meal 😊. Carefully fold over because corn tortillas do crack easily. You can heat the tortillas in a microwave to make them more pliable.
Lay quesadillas in the hot pan. A wide spatula/turner is necessary to "flip" the tortilla. Cheese should be melted at this point. Remove from pan when both sides of the tortilla is lightly browned.
Lay on a plate and serve with a hot sauce.
