Salad Mountains
One evening when I was making our salads, my boyfriend brought to my attention that “it isn’t a salad, it’s a vegetable mountain”… so I have now decided one of my most favorite and quick dinner go-to’s is a Salad Mountain. Here is how you can make one:
1. Add a base layer of greens of choice
2. Stir fry any veggies you have in the fridge (I like doing red onions, asparagus etc) - sometimes I like adding in some lentils
3. Roast some beans and potato in the oven or air fryer (my bean of choice is chickpeas)
4. Layer everything up
5. Top with “accessories”: diced up tomatoes, cucumbers, fresh herbs, nuts, seeds, croutons
6. Drizzle homemade dressing
