“leftovers” remix
I really hate letting food go to waste and one of the best parts of working with veggies if you can remix leftovers easily into a whole other meal.
I will post the first meal that this was (the veggies on the left side of the bowl) - that I stir-fried with some new veggies (onion kale and bok choy), then I made some quinoa (on the right) and then whipped up an avocado sauce to bring the bowl together.
Avocado sauce:
1 whole avo
1 tbsp olive oil
1 tsp nutritional yeast
2 fresh limes
2 tbsp hemp seeds
1 tbsp vegan garlic aioli
All together it took 15 min
