Pesto with a twist!
Instead of really expensive olive oil these days, I used avocado oil (which has become cheaper than olive oil here in Canada
Also, pine nuts are so expensive and I like the taste of raw pumpkin seeds
Process the basil, parsley, and most of the oil until "chunky" consistency happens
Then add the remaining ingredients and add more oil if the mixture becomes too dry. The texture shoild be somewhat smooth and creamy
Put into container of choice and freeze
