A local traditional Nova Scotian šØš¦ dish...
Hodge Podge!
Organic baby potatoes, carrots, fresh string beans, and sweet peas gently cooked in a bit of water. Start with potatoes and carrots and cover with water. Bring to a simmer for 5 min. then add string beans, let cook for another 10 min. until veggies are almost cooked through, then toss in the peas for the last 5 min. Drain almost all the veggie water (secret to a good flavour is to use a bit of the cooking water š¤«).Add salt and pepper.
Traditional additions for this local dish is using loads of butter and cream/blend/or half and half. My version still uses some butter, which adds flavour (can use vegan butter) and plant-based milk. I like using soy or almond/cashew. Not as "heavy" but still yummy. Great with healthy grilled protein of choice.
Hodge-podge is even better gently re-heated (do not let the milk boil!)
